Mock Strawberry Spread

This is a recipe my grandmother gave me years ago. When the garden is in full swing it is a useful way to use tomatoes. Yes, you will be surprised to find this taste and looks like strawberry jam but is made with tomatoes. They used to become very resourceful with crops when they were plentiful. This is a very simple recipe and doesn't require a lot of time or skill to make.

Here is the recipe.

Mock Strawberry Spread

In a small pan take 3 cups of tomatoes that have been skinned and chop them in small pieces. (You can use canned if you drain them.)

Mash these and then add 2 cups of sugar.

Boil this for 15 minutes. This will allow the tomatoes to be very soft and almost like a juice.

After it has boiled add a small box of strawberry Jello, and stir it.

Remove from the heat and let cool

Once the mixture has cooled you can put it in jars and refrigerate or you can put in containers and freeze it.

You will be amazed that this not only tastes like but looks like strawberry jam. Since the seeds in the tomatoes put you in mind of the strawberry seeds, many will be surprised that there are no strawberries in it. The jello adds the flavoring.

Think about how nice this will be over some fresh bread. It is a great thing to freeze and have during the winter.
